Tim Korby
Julio's Wine Director

Wow, it’s been extremely busy in Julio’s wine department over the past 10 days, and I don’t see it slowing down anytime soon.  Thanks to all of you that came in and participated in our last 25% off sale of the year – it was a HUGE success. The re-model is nearing completion and I have “Tasting with Tim” tonight with a few of my new wines.  On Saturday is the Metro West Humane Society wine tasting & benefit, then on Tuesday is the big one: “The Insania Event” with Geoff Tate and Queensryche (then their show at The House of Blues on Wednesday).  We are following that up with my good friend Melvin Master of Tortoise Creek & Tiamo organic wines on Saturday; the Franciscan “Magnificat” blending seminar on Thursday the 3rd and then Julio’s Wine Gala on Sunday Nov 6th (our biggest wine tasting event of the year) in the new Julio’s Metro Station. -Tim

True Tools Black Velvet Thermometer
by Sallee Dancer, Wine Associate

The temperature of a wine alters the taste dramatically, so to serve it at the correct temperature is very important.  A white wine that comes straight out of the refrigerator is too cold to truly taste the wine, so it should sit at room temperature for a little while.  How long?  Well, that's hard to say, but by using the Black Velvet Thermometer you can take the guess work out.  You place it around the bottle and it reads the exact temperature.  A white wine should be served between 43 and 48 degrees and a red between 59 and 64 degrees. Buy it on line Now!

2008 Howell Mountain Cabernet Sauvignon

(94+ Points) "The 2008 Cabernet Sauvignon Howell Mountain is comprised of 81% Cabernet Sauvignon and the rest six other grapes – Merlot, Malbec, St. Macaire (how often do you see that!), Petit Verdot, Carmenere, and Cabernet Franc – and is aged 20 months in three-fourths French oak. It has a dense purple color, a wonderful, crystalline nose of crushed rock, camphor, creme de cassis and spring flowers, and a full-bodied mouthfeel. The tannins are moderately high, but they are soft and well-integrated. This is a wine of tremendous intensity and plenty of up-side. Give this wine 2-3 years of bottle age and drink it over the following 20-25 years." - Robert Parker

2008 Mount Veeder Cabernet Sauvignon

(98 Points) "Absolutely prodigious is the 2008 Cabernet Sauvignon Mt. Veeder (500 cases of 100% Cabernet Sauvignon off a site west of Oakville). Dense bluish purple to the rim, with a sensational nose of forest, flowers, graphite, and blueberry liqueur intermixed with creme de cassis and burning embers/charcoal, this wine has fabulous fruit, a remarkably full-bodied texture, great purity, and a finish that goes on for close to 50+ seconds. This is an awesome 2008 and one of the great wines of the vintage. It should drink well for 25+ years."
